Prosciutto & Brie Breakfast Cocotte

Instructions

Preheat oven to 375°F (190°C).

Butter the ramekin well.

Layer torn prosciutto, brie cubes, and optional feta into the prepared ramekin.

Crack 2 eggs into the ramekin.

Add a tiny splash of cream or milk (if using) and black pepper.

Place the ramekin on a baking tray; do not cover it.

Bake for 14-18 minutes for runnier yolks, or 18-22 minutes for firmer eggs, noting that 2 eggs may require slightly longer cook time.

Top with pickled onions, herbs or chives, and a dollop of labneh on the side.

Serve immediately with toasted bread for dipping.

Notes

Go light on salt as prosciutto and feta are already salty. If the top starts browning before eggs are set, loosely tent with foil for the last few minutes.
