Heat 1 tbsp olive oil in a skillet over medium heat. Add the chopped onion and cook until softened and lightly browned around the edges, about 3 to 4 minutes.

Add the ground sirloin, 1 teaspoon salt, and minced garlic. Cook until the meat is browned, about 3 to 4 minutes, stirring occasionally to break up the meat.

Add the chili powder, ground cumin, chipotle powder, and ground coriander. Stir well to combine.

Pour in beef broth as needed. Bring the mixture to a simmer and cook, uncovered, until the sauce is slightly thickened, 2 to 3 minutes.
