Instructions

Rinse mussels and discard any that are cracked or stay open after tapping.

In a wide pot, sautรฉ shallot, garlic, and ginger for 2 minutes.

Add curry paste and cook 1 minute until fragrant.

Add coconut milk, fish sauce, and brown sugar. Simmer 3โ€“4 minutes.

Add mussels, cover, and steam 5โ€“7 minutes until opened. Discard unopened mussels.

Finish with lime juice and cilantro. Serve with bread or rice for the broth.
