Instructions

Rinse mussels and discard any that are cracked or stay open after tapping.

In a wide pot, sautรฉ shallot, garlic, and ginger for 2 minutes.

Add curry paste and cook 1 minute until fragrant.

Add coconut milk, fish sauce, and brown sugar. Simmer 3โ4 minutes.

Add mussels, cover, and steam 5โ7 minutes until opened. Discard unopened mussels.

Finish with lime juice and cilantro. Serve with bread or rice for the broth.
