Chicken Salad Sandwich

Instructions

Shred the chicken using two forks, keeping the pieces chunky.

In a bowl, mix the mayonnaise, Dijon mustard, and lemon juice.

Add the shredded chicken, finely diced celery, and finely diced red onion to the bowl. Fold gently to combine.

Season the chicken salad with salt and black pepper to taste.

If time allows, chill the chicken salad for 20-30 minutes to allow the flavors to meld.

Pile the chicken salad onto toasted sourdough bread. Add lettuce leaves and sliced tomato if desired, then serve.

Notes

Optional additions for the chicken salad include a pinch of smoked paprika or a handful of halved grapes or chopped walnuts for texture.
